Saignée de Bisseuil

Based across premier crus, Mareuil – Sur- Ay, Bisseuil and Avernay – Val – D'or, Antoine farms 5ha organically with only 1ha of those being for his own wines. Having such small production means volumes are low, controlled and attention to detail is completely maximized.  

Guy Bouvet, Antoine’s grandfather, set up the domain in 1970. Guy passed on the domain to Antoine when he was just 17, it was not only that, but he passed on his sensitivity to terroir, his passion, and his wisdom. Antoine’s adoration for Guy can be seen in the homage in each label. Inheriting the generational vineyard, the vines are made up of old massale selection, whose old roots have dug deep into the chalk soils – across the Champagnes we can taste the rich, complex history of the fruit. With traditional wood cask ageing, old vines, employing biodynamics, and a playfulness with oxidation that gives his champagnes unique vinous mineral quality, Antoine is truly at the forefront of those special winemakers embracing both tradition and modernity.
